Whilst I don’t mind cooking anything from scratch, I’m very impatient and like to see quick results. 

These recipes need minimum time in the kitchen and best of all, the ingredients are staples you’ve probably already got at home. 

If you don’t, you’ll find them affordable and easily available at your local supermarket or online.

1. Espresso and Chocolate Tiramisu

This Espresso and Oreo no bake cake is perfect to serve as a decadent and impressive dessert, and is so simple to make.

You’ll need to allow 30 minutes for prep and 10 minutes to cook for the custard.

Make this easy coffee cake ahead of time to allow four hours for chilling.

Ingredients needed:

  • Egg Yolks
  • Sugar Granulated or caster sugar adds the perfect amount of sweetness to the tiramisu filling
  • Espresso – Brew fresh espresso, or use instant espresso. Both will work equally well. 
  • Vanilla Extract – Since this recipe is not baked, the vanilla flavour will really come through.
  • Mascarpone Cheese – You can find this creamy, slightly sweet Italian cheese at most supermarkets now. Allow it to come to room temperature before using. 
  • Whipping Cream – Mixed with the eggs and cheese, cream will add fluffiness to the filling. 
  • Oreos – You’ll need just slightly less than a standard package of Oreos for this recipe.
  • Cocoa Powder – Regular or dutch process cocoa powder is dusted on top for a beautiful presentation and an extra bit of chocolate.

If your coffee cake doesn’t get eaten in one sitting, you can store it covered in the fridge for up to a week.

You can also freeze tiramisu for longer storage, up to three months in a sealed container.

Alcohol free (this recipe has tons of flavour without it) you’ll be able to serve to the teens too.

2. Homemade Brownies with Coffee

Did you know that adding coffee to brownies enhances the chocolate flavour?  Who knew!

It brings out a more intense flavour in the chocolate which results in a richer brownie.

For this recipe, it’s best to use leftover coffee.  You can use fresh brewed coffee as well but you’ll have to allow it to cool before adding it to the batter.

Allow 15 minutes prep and 30 minutes to cook.

Ingredients needed:

  • Cocoa Powder; unsweetened for baking
  • Flour
  • Sugar
  • Butter
  • Eggs
  • Vanilla
  • Coffee – the longer the coffee sits, the stronger it will become.

I love that you melt the butter, cocoa and coffee in the microwave before stirring in the remaining ingredients – my definition of an easy coffee cake 🙂

3. Coffee Cheesecake

This Baked Coffee Cheesecake with Coffee Whipped Cream is a decadent dessert that is perfect for coffee lovers.

Packed with espresso flavours, it is creamy, crunchy, smooth and simply delicious!

Easy to make (no water bath needed!) but you will need time to chill. 

Make-ahead and keep in the fridge until ready to serve.

Ingredients needed:

Cookie Crust

  • Crushed Digestive Biscuits

Since Digestive Biscuits are already sweetened, there is no need to add sugar to the crust.

  • Unsalted Butter

Espresso Cheesecake Filling

  • Cream Cheese

Use Full-Fat Cream Cheese for the best results.

  • Sour Cream
  • Coffee

Freshly brewed Espresso. Make sure to let the coffee cool down before you add it to the rest of the ingredients.

  • Vanilla

Vanilla Paste but you can also use Vanilla Extract or Essence

  • Sugar

Caster Sugar or Castor Sugar

  • Eggs

Medium size. make sure they are at room temperature

Coffee Whipped Cream

Classic Whipped Cream

  • Heavy / Thickened Cream
  • Caster Sugar
  • Espresso or instant coffee powder

With a light and creamy texture, the coffee flavour doesn’t overpower this dessert.  One to impress your guests.

4. Coffee Cupcakes with Coffee Buttercream

  • Self-raising flour + baking powder + salt
  • Granulated sugar
  • Butter

  • Instant coffee + hot water
  • Milk

Coffee Buttercream Frosting

  • Icing sugar
  • Shortening (Stork Bake is a suitable substitute for the UK)
  • Butter
  • Instant coffee + hot water
  • Milk
  • Milk chocolate coins

It will take you 30 minutes to prep, 15 minutes to cook and if you add the frosting, another 30 minutes.

Superbly moist, these are the best coffee cupcakes ever for coffee lovers.

5. Coffee and Walnut Cake

My favourite treat, whether out with family or friends at Café Riva, is their homemade Coffee and Walnut Cake.  It wasn’t a hard decision to choose this recipe to share!

Extra moist and buttery, with just the perfect intensity of coffee flavour to please us coffee lovers, this is the perfect treat to serve up.

Ingredients for the cake batter:

  • Plain or all purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Walnuts, for the cake as well as extra for topping
  • Butter, unsalted, at room temperature
  • Caster sugar
  • Eggs
  • Vanilla extract
  • Instant coffee granules, to be made into a coffee solution with hot water (can be substituted with strong espresso)
  • Milk

Ingredients for the coffee glaze:

  • Icing or confectioner’s sugar
  • Butter, unsalted
  • Instant coffee granules, to be made into a coffee solution with hot water (can be substituted with strong espresso)

The rich and delicious coffee glaze really turns this cake into a decadent, yet light dessert! And the great thing is that it’s so easy to put together. It won’t add more than 10 minutes.
